Boneless wings were introduced at Buffalo Wild Wings in 2003 and quickly became one of the sports bar’s most popular menu items, with nearly 100 million served up every year. But while guests’ love of boneless wings grew exponentially, the product at Buffalo Wild Wings has remained the same over the past 16 years.
That’s why when Jamie Carawan, Vice President of Brand Menu and Culinary, joined Buffalo Wild Wings in June 2018, his top priority was to create a new and improved boneless wing for Buffalo Wild Wings sports bars nationwide – a task he knew would not be easy.
“Discovering a new boneless wing offering for Buffalo Wild Wings was one of the more difficult food and beverage innovation projects of my career,” Carawan said.
Innovation around the new boneless wing kicked off in August 2018, and in December 2018, the culinary team began in-restaurant tests with a bigger, juicier, tastier boneless wing. The chicken is first marinated in a blend of spices then coated in a savory new breading. With over 30 percent less breading than before, the larger piece of marinated white chicken packs more flavor into every bite.

Every wing connoisseur knows that a boneless wing is the perfect vehicle for a delicious sauce, which is why Buffalo Wild Wings is introducing a new sauce to its lineup: the Original Buffalo Sauce, made in-house every day.
“I remember trying buffalo sauce for the first time many years ago before it was mainstream,” Carawan said. “It caught you off guard with its vinegary, not-so-subtle flavor, but you just immediately wanted more.”
The Original Buffalo Sauce is intended to reintroduce guests to that original flavor, reminiscent of what was served up when the first Buffalo Wild Wings opened its doors in 1982.
The new boneless wing offering and Original Buffalo Sauce can be found in Buffalo Wild Wings sports bars nationwide today.
